Irish Soda bread is a traditional Irish recipe that can be made with many variations. The Foodie version is made the traditional way with currants but can easily be substituted with raisins (we highly recommend the currants!). We also prefer the bread a little sweeter but you can cut the sugar in half if you prefer.
Most of us prepare this bread around St Patrick’s day but it’s a great and very easy bread to make any day! It’s an unleavened bread, which means there is no yeast, similar to a scone or biscuit in texture. The combination of the baking soda, baking powder, and buttermilk result in a reaction that creates small bubbles and creates the soft texture of the bread. Because it has no yeast there is no rising time or kneading between risings.
It’s delicious as a side to a bowl of soup, stew, or breakfast treat! Leftovers can be toasted or reheated on a low temp for a few seconds in the microwave. It is best eaten right away because there are no preservatives.
